RICE PUDDING 
1 c. rice
1 1/2 c. water
1/2 tsp. salt
2 c. milk
2 eggs, beaten
1/3 c. sugar
1 tsp. vanilla
1/4 c. raisins, steamed in water and drained
Cinnamon

Preheat oven to 350 degrees. Bring water to boil. Stir in rice and salt. Cover and simmer until water absorbed. Add milk and boil gently, stirring occasionally until slightly thickened. Combine eggs, sugar, and vanilla in bowl. Stir in rice mixture. Add raisins. Pour into greased casserole dish. Sprinkle on cinnamon. Place casserole in pan containing 1 inch water. Bake uncovered at 350 degrees for 45-50 minutes.
