CREME DE MENTHE PIE 
22 chocolate cookies, finely crushed
1/4 c. butter, melted
4 egg yolks
3/4 c. sugar
1 tbsp. gelatin
1/4 c. cold water
1/4 c. cream de menthe
1 1/2 c. heavy cream, whipped
Bitter chocolate, grated

Combine cookie crumbs and butter and press into pie plate. Chill. Beat egg yolks with sugar until thick and yellow. Soak gelatin in cold water for 5 minutes over hot water. Add to egg mixture. Add creme de menthe and stir. Cool until it begins to thicken. Fold in whipped cream. Pour into crust. Sprinkle grated chocolate on top. Place in refrigerator until ready to serve. Serves 8.
