TAHITIAN HAM LOAF 
1 lb. ground center cut ham
1 lb. ground fresh pork
2/3 c. coarse cracker crumbs
1/2 c. chopped onion
1/2 c. milk
1 slightly beaten egg
1 tbsp. parsley flakes
Dash of pepper
1 lg. can pineapple rings

Call the butcher early in the day to grind meat. Have meat ground together (meat loaf consistency).

Combine the first 8 ingredients. Shape the mixture into 9 patties, don't make them too thick. In a 13 x 9 inch baking dish or cake pan, stand up a row of patties with a pineapple ring between each patty. Start and end row with a patty. Bake in a slow oven, 325 degrees for 30 minutes.

GLAZE:

1/4 c. pineapple juice
1 c. brown sugar
2 tbsp. vinegar
1 tsp. dry mustard

Combine glaze and pour over patties and pineapple and continue baking 1 hour longer, basting every 20 minutes.
