PINEAPPLE CHEESECAKE BARS 
Crust:

1 pkg. Pillsbury Plus white cake mix
1/2 c. butter, softened
1-2 tsp. coconut extract

Topping:

1 can Pillsbury frosting supreme (ready to spread) vanilla frosting
1 (8 oz.) pkg. cream cheese, softened
1 (20 oz.) can crushed pineapple, well drained
2 eggs

Pre-heat oven to 325°F. Grease 13 x 9 inch pan. In large bowl combine all crust ingredients at low speed until soft dough forms. Press into bottom of pan.

In same bowl blend frosting, cream cheese and pineapple until well mixed. Reserve 1 cup for frosting. Pour on top of crust and bake for 35-40 minutes. Let cool for 15 minutes before frosting. Refrigerate.
