YAM (SWEET POTATO) PIE 
3 lg. eggs
3/4 c. sugar
1 c. cooked, mashed yams
1 1/2 tbsp. butter, melted
1/2 c. white corn syrup
1 1/2 tbsp. plain flour
Pinch of salt
1 tsp. cinnamon
1/2 tsp. vanilla
1 (9 inch) unbaked pie crust

Preheat oven to 325 degrees. Beat eggs slightly with a fork. Add sugar, mashed yams, melted butter and syrup. Stir in slowly the flour, salt, cinnamon and vanilla. Pour into unbaked pie crust. Bake for approximately 1 hour. Pie will be done when center rises. Makes 6 servings. Top with whipped cream or Cool Whip to serve.
