MOON CAKE 
1 c. flour
1 c. water
1/2 c. butter
4 eggs
2 boxes instant vanilla pudding
8 oz. cream cheese
large whipped topping
chopped nuts (optional)

Bring water and butter to boil. Add 1 cup flour and stir rapidly until it forms a ball. Remove from heat and cool a bit. Add eggs one at a time and beat until shiny. Spread on 11 x 15-inch ungreased cookie sheet.

Bake 30 minutes at 400°F. Cool completely and do not prick cake. Make pudding following package directions. Add softened cream cheese to pudding. Spread on crust. Refrigerate 20 minutes. Top with whipped topping and nuts.
