MOON CAKES 
1/2 lb. butter
2 c. sugar
5 egg yolks
3/4 c. milk
2 c. flour
1 tsp. baking powder
5 egg whites
2 tbsp. flour

Beat egg whites. Set aside. Cream butter and sugar. Add egg yolks and beat again. Add milk, flour and baking powder. Sprinkle 2 tablespoons flour on top of egg whites. Fold into first mixture. Spread in greased jelly roll pan. Sprinkle top with 1/2 cup ground nuts and 1/3 cup sugar. Bake 30 minutes at 350 degrees. When cool, cut into crescents with edge of a glass.

Egg whites should never be done first. Egg whites, when beaten, have an extremely short volume life. For this recipe, do the cream first and then do the egg whites because the whites can never wait. When folding, remember that you are trying to keep the volume up, so don't over mix the product. Be as gently as you can. At the CIA they teach us to do it a certain way. 12 o-clock, 6 o-clock, give a 1/4 turn. Meaning, with your bench scrape, scrape to the bottom of the bowl from 12 o-clock all the way to 6 o-clock position, then gently overlap while giving a 1/4 turn of the bowl.
