BEEF AND POTATO CASSEROLE 
1 lb. ground beef
3/4 c. boiling water
1 can cream of mushroom soup
1/4 tsp. pepper
1 tsp. shortening
1 small onion, chopped
1/2 tsp. salt
6 medium potatoes, sliced

Brown ground beef in shortening; drain. Add onions to boiling water and simmer for 5 minutes. Add mushroom soup, salt and pepper to cooked onion. Cover bottom of 1 1/2-quart casserole dish with layer of sliced potatoes. Cover with a thin layer of ground beef. Top with onion soup mixture and continue alternating layers.

Bake at 350°F for 40 minutes to 1 hour or until potatoes are done. Extra water may be added if needed.
