BEAN SOUP 
7-10 varieties of dried beans to equal 1 lb.
1 ring smoked sausage, chopped
1 lg. onion, chopped
1 lg. can tomatoes, chopped
1 red pepper, chopped
1 tsp. chili powder
Juice from 1 lemon
1 clove garlic, minced
Salt and pepper to taste

Wash beans thoroughly and place in a pan. Cover with water and 2 tablespoons of salt. Soak overnight. Next morning; drain beans and then add 2 quarts of water. Add sausage and bring to a boil. Simmer 2 1/2 to 3 hours. Add remaining ingredients. Simmer another 30 minutes. Serve with crackers and green salad. Serves 12.
