KEY LIME PIE 
1 baked and cooled pie shell
4 eggs
1 can Eagle brand sweetened milk
1/2 c. lime juice
Several drops green food color
1 to 2 tsp. grated lime rind

Separate eggs. Set aside 3 whites for meringue (reserve 1 for pie mixture). Beat egg yolks and combine with Eagle brand milk, lime juice, rind and coloring. Set aside. In small bowl, beat egg white (1) until stiff then fold into sweet mixture. Pour into pie shell. (Use remaining egg whites for meringue. Beat until stiff gradually adding 1/2 cup granulated sugar). Bake until at 375 degrees for 10 minutes. Chill at least 4 hours. Can use Cool Whip instead of meringue.
