BAKED CHICKEN REUBEN 
8 sm. skinless, boneless chicken breast halves
1 (16 oz.) bag or can sauerkraut
4 slices natural Swiss cheese, each about 6x4
1 (8 oz.) bottle Thousand Island salad dressing
1 tbsp. chopped parsley

About 50 minutes before serving:

Preheat oven to 375 degrees. In 13x9 baking pan arrange chicken breast halves in one layer. In sieve, rinse sauerkraut with running cold water, then press out excess liquid. Cut each slice of cheese crosswise in half. Sprinkle sauerkraut on chicken breasts and top each with a piece of cheese. Pour salad dressing over cheese.

Cover pan with foil; bake 40 minutes or until chicken is fork-tender. Skim fat. Garnish with chopped parsley. Makes 8 servings.
