REUBEN BAKED CHICKEN 
4 boneless chicken breast, skinless and cut into halves
1/4 tsp. salt
1/8 tsp. pepper
1-16 oz. can of sauerkraut, rinsed and well drained
4 (4 x 6 in.) slices of natural Swiss or mozzarella cheese
1 1/4 c. bottled Thousand Island dressing

Preheat oven to 350°F. Place chicken breast in a greased 9 x 13 baking pan. Sprinkle with salt and pepper. Rinse and drain the sauerkraut and place over the chicken, top with slices of cheese. Pour dressing evenly over the cheese. Cover with foil.

Bake in oven 1 to 1 1/2 hours or until chicken is tender.
