BAKED CHICKEN REUBEN 
8 skinless, boneless chicken breast halves
1/4 tsp. salt
1/4 tsp. black pepper
Parsley
1 (16 oz.) can sauerkraut, drained well
4 slices natural Swiss cheese
1 1/4 c. Thousand Island salad dressing

In greased baking pan, place chicken, sprinkled with salt and pepper. Place WELL DRAINED sauerkraut on top of chicken. Cut each slice of Swiss cheese in half (long way) and place half of slice of cheese on top of sauerkraut. Pour Thousand Island salad dressing evenly over the cheese. Cover pan with foil and bake at 350 degrees for 1-1 1/2 hours. Sprinkle with parsley before serving.
