OVEN ROASTED POTATOES 
1/2 clove unpeeled garlic
Nonstick vegetable cooking spray
2 lbs. new or red potatoes
1 tbsp. olive oil
1/2 tsp. crushed rosemary
1/2 tsp. crushed thyme
1/4 tsp. salt
1/8 tsp. pepper

Rub a 13x9x2 inch ovenproof baking pan with the clove of garlic. Spray pan with nonstick vegetable spray.

Scrub and quarter potatoes; add to baking dish. In a small bowl, mix olive oil, rosemary, thyme, salt and pepper. Pour olive oil/ spice mixture over potatoes and toss to coat well. Bake, uncovered, in 450 degree oven for 25-30 minutes. Sir occasionally. Potatoes should be browned crisp on the outside and soft inside. Makes 8 servings.
