1 lb. sausage (link) 1 No. 2 can corn (or cut fresh, 2 c.) 1 No. 2 can tomatoes (or several fresh ones) 1 No. 2 can tomato juice 1/2 tsp. salt, 1/2 tsp. pepper (or to taste) 1 tsp. sugar Put sugar, salt, pepper into tomato juice. Stir to dissolve. Set aside. Pare and slice potatoes into Dutch oven. Add corn, then tomatoes. Do not stir. Cut sausage into bite size slices and lay on top of potato mixture. Pour juice over all. Cover and cook until potatoes are tender, about 40 minutes. |
