DANISH APPLE WALNUT CAKE 
4 c. apples, coarsely chopped
2 c. sugar
1 1/2 c. vegetable oil
2 eggs
2 tsp. vanilla
2 c. flour
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
1 c. each raisins & chopped walnuts

Preheat oven to 350 degrees. Use oblong (13x9 inch) greased pan.

Combine apples and sugar and set aside.

Lightly beat eggs, oil and vanilla and set aside.

Sift flour, baking soda, cinnamon and salt into large bowl. Stir in apple and sugar mixture along with egg mixture alternately into flour mixture. Stir in raisins and walnuts. Pour into greased oblong pan. Bake 1 hour at 350 degrees.

FROSTING:

1 (8 oz.) pkg. cream cheese
3 tbsp. butter
1/2 c. powdered sugar
1/2 tsp. vanilla

Or you can use Whipped Cream.
