JIFFY APPLE WALNUT COFFEE CAKE 
1/3 c. packed brown sugar
1/2 c. chopped walnuts
2 c. Jiffy baking mix
1 c. chunky applesauce
1/3 c. milk
1/2 tsp. ground cinnamon

Mix brown sugar and 1/4 cup walnuts; set aside. Mix remaining ingredients; beat 30 seconds. Spread in round microwave 8 x 2 inch dish. Sprinkle with brown sugar mixture. Microwave on power level 10 (high), rotating dish 1/4 turn every 3 minutes until top springs back when touched lightly and cake begins to pull away from side of dish, about 6 to 9 minutes. Cool 10 minutes on heat-proof surface (not wire rack). Drizzle with glaze made by mixing 1/2 cup confectioners' sugar, 2 teaspoons milk or water, and 1/2 teaspoon vanilla; stir until smooth.

Since microwave ovens vary in power, you may need to adjust your cooking time.
