HARVEST APPLE WALNUT CAKE 
4 c. coarsely chopped apples
2 c. sugar
2 eggs, slightly beaten
1/2 c. vegetable oil
2 tsp. vanilla
2 c. flour
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
1 c. chopped walnuts

Combine apples and sugar; let stand. Beat eggs, oil and vanilla together. Mix and sift flour, baking soda, cinnamon and salt. Stir into egg mixture alternately with apple-sugar mixture. Stir in chopped walnuts. Pour into greased and floured 13"x9"x2" pan. Bake at 350 degrees for about 1 hour or until cake tests done. Let stand in pan until cool. Frost if desired.
