HARVEST OATMEAL CAKE 
1 c. rolled oats
1 1/2 c. boiling water
1/2 c. Crisco oil
1 c. brown sugar
1 c. white sugar
2 well-beaten eggs
1 1/3 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. vanilla

Mix together oats and boiling water; let stand 20 minutes. Cream together oil and sugars. Add eggs and oatmeal mixture. Add rest of ingredients. Put in large 9x13 inch loaf pan. Bake at 350 degrees for 30-35 minutes.

TOPPING:

6 tbsp. melted shortening (Mazola)
1/2 c. brown sugar
1 c. coconut
1 c. pecans or walnuts, chopped
1 tsp. vanilla
1/4 c. evaporated milk or cream

Mix together all of the above. Put on top of cake while still hot. Broil under broiler 4 to 6 minutes. WATCH CLOSELY.
