SAUTEED CHICKEN BREASTS WITH
LEMON AND SHERRY
 
4 split chicken breasts, boned and skinned
4 tbsp. butter
1 c. sliced, fresh mushrooms
1 tbsp. chopped green onion
1/2 lemon, cut into slices
Juice of other lemon half
2 tbsp. sherry

Saute chicken breasts until done. Remove from pan. Saute mushrooms and onion in same pan. Add lemon slices, lemon juice and sherry. Simmer for 1 to 2 minutes. Pour over chicken breasts. Serves 4.
