STEVE'S ITALIAN LASAGNA 
2 pounds Italian sausage
1 cup finely chopped onion
6 cloves garlic, finely chopped
3/4 cup olive oil
1 (28 ounce) can crushed tomatoes
1 (12 ounce) can diced tomatoes
2 cups water
2 tablespoons brown sugar
2 tablespoons basil
1/2 teaspoon fennel seeds
3 tablespoon Italian seasoning
1 tablespoon salt
1/4 teaspoon black pepper
3 tablespoons chopped parsley
18 lasagna noodles
15 oz. cottage cheese or ricotta
1 egg
1/2 teaspoon salt
1 tablespoon parsley
1/2 teaspoon nutmeg
1 bag shredded mozzarella cheese
1 bag shredded cheddar cheese
grated Parmesan cheese

Brown Italian sausage.

In a separate pan, sauté onion and garlic in olive oil until soft. Mix browned sausage and the onion, garlic, and olive oil mixture together in large pan. Stir in tomatoes, and water. Season with brown sugar, basil, fennel, Italian seasoning, salt, pepper, and parsley.

Simmer covered for 3 hours, stirring occasionally. Cook noodles. Mix cottage cheese or ricotta, egg, salt, parsley, and nutmeg in separate bowl. Preheat oven to 325°F.

To assemble, pour a thin layer of meat sauce in the bottom of 9x13 baking dish. Then put a layer of noodles over meat sauce. Now spread a thin layer of the cottage or ricotta cheese mixture over the noodles.

Next, sprinkle a layer of mozzarella and cheddar cheese over that. Add another layer of meat sauce over mozzarella and cheddar. Now sprinkle a layer of Parmesan cheese over that. Repeat this assembly process one more time. Lastly sprinkle with parsley.

Cover with foil. To keep foil from sticking, spray with cooking spray. Bake covered for 60 minutes.

Remove foil and bake for an additional 20 minutes or until golden brown.

Can this recipe be made and frozen ahead of time? Can I also add about 1/2 lb. of ground beef?

This is the best Lasagna I have ever had!! The only change I made was one lb hamburger and one lb sausage. And the 3/4 cup of olive oil is correct! The cheese needs it to stay soft. Thank you for sharing!!

This has become the new Christmas Lasagna recipe. Every time I make it everyone raves! The only thing I do different is add another egg and a whole teaspoon of nutmeg. I use a block of ricotta so the egg helps it bind better.
