SWEET POTATO CASSEROLE 
4-6 baked sweet potatoes
2 eggs
1 tsp. vanilla
1 c. sugar
1 stick butter, melted

Bake potatoes, cool and dice. Mix all other ingredients and stir into potatoes, place in buttered casserole dish.

TOPPING:

1 c. brown sugar
1 c. pecans, chopped
1/3 c. flour
1/2 stick butter, melted

Mix with fork to crumb consistency, sprinkle on top of potato mixture. Bake at 325 degrees for 30 minutes.
