PUMPKIN ROLL UP | |
1 c. sugar 2/3 c. cooked pumpkin 3/4 c. flour 1/2 tsp. cinnamon 1 tsp. baking soda 3 eggs Combine all ingredients and mix well. Cover a cookie sheet with wax paper and pour mixture on top. Bake at 375°F for 15 minutes or until brown. Sprinkle 1/2 c. powdered sugar on to a towel. Flip cake onto sugar coated towel. Remove wax paper and roll cake up in a towel. Unroll when cooled. Spread 1 can sour cream or cream cheese icing over cake. Sprinkle with pecans and roll the cake again. Sprinkle with powdered sugar. Serve chilled. |
