PUMPKIN ROLL 
3 eggs
1 c. sugar
2/3 c. pumpkin
1 tsp. baking soda
1/2 tsp. cinnamon
3/4 c. flour

Mix all together. Line cookie sheet with wax paper.

Bake at 350°F for 15 minutes. Sprinkle clean towel with powdered sugar, then sprinkle top of cake. Tip cake onto towel and roll tightly right away and refrigerate until almost cool. Unroll and spread with filling.

Filling:

1 c. powdered sugar
1 tsp. butter
8 oz. cream cheese
1 tsp. vanilla

Re-roll in powdered sugar.
