PUMPKIN ROLL 
3 eggs
1 c. sugar
2/3 c. pumpkin
1 tsp. baking soda
3/4 c. plain flour
1/2 tsp. cinnamon
1/2 tsp. salt

Filling:

8 oz. cream cheese (room temperature)
1 c. powdered sugar
2 tbsp. butter (room temperature)
1 tsp. vanilla

Mix first 7 ingredients. Spray Jelly Roll pan with Pam, put wax paper in pan, spray wax paper with Pam also. Spread mixture out on wax paper.

Bake at 350 for 15 minutes. Meanwhile, mix 4 ingredients for filling until very smooth. Lay out a dish towel and sprinkle it with powdered sugar. Dump roll on top of towel so that wax paper is on top. Then, roll bread with towel and wax paper still in it. After refrigerating roll for a few hours (or overnight), unroll bread, remove wax paper and towel, and spread filling mixture over roll. Re-roll.
