NUT COOKIES 
2 c. nuts, finely ground
1 c. sugar
4 egg whites
2 tbsp. jam or marmalade
Lemon icing
Additional nuts and candied fruit for topping

Beat together the egg whites and sugar until light and fluffy. Add nuts and stir thoroughly. Using a pastry bag, pipe medium-sized cookies onto well greased baking sheet.

Bake in a 300°F oven for about 10 minutes. Remove cookie sheet from oven. Loosen from sheet while still soft. Turn upside down, and allow to cool. Spread jam or marmalade on flat side. Cover with lemon icing. Decorate each cookie with a bit of candied fruit, and a nut meat.
