BEST SPINACH AND ARTICHOKE DIP

Yummy! A Party Favorite!

1 (10 oz.) pkg. frozen spinach, thawed
1 jar marinated artichokes, chopped
1 (8 oz.) pkg. Philly cream cheese
1 cup dairy sour cream
3/4 cup shredded Parmesan cheese
8 oz. shredded Monterey Jack cheese
1/2 onion, finely chopped
1/2 cup (1 stick) butter
red pepper flakes, to taste

Sauté onions in butter, adding ingredients while mixing and blending well after each addition. Add ingredients in this order: Spinach, Cream Cheese, Sour Cream, Parmesan Cheese, Artichoke Hearts, Crushed Red Pepper Flakes.

Remove from heat and put in crocks or microwave dish. Top with Monterey Jack Cheese and melt.

Serve hot with chips or bread.

Note: May also add Mozzarella Cheese on top and lightly brown.

This is great!! To make less fattening - I saute onions and 2 gloves of garlic in spray on olive oil. Non fat cream cheese and sour cream (trust me you won't know the difference!) and reduced fat cheese blend. Spinach and artichokes of course, and my secret incredient....fresh salsa from the market. It comes alive with flavor, just enough heat, and so creamy.

Can't miss with this. I have never put butter in mine, but have used a combo of cream cheese,sour cream and mayo or mayo and cream cheese only if I don't have sour cream. Also I like using the frozen artichoke. Cut up in pieces that fit on cracker or whatever .. You just have to season with additional stuff. Variations:

- Add a few drops of Tabasco sauce.
- Add Shredded Asiago cheese.
- Add Package of Ranch dressing seasoning (dry).
