S.'S BEAN - ROAST 
1 lb. Great Northern white beans
1 3 to 4 lb. roast (cheap cuts are great)
Meat tenderizer
2 tbsp. cooking oil
1 chopped onion
3 c. tomato juice
Barbecue sauce
1 tsp. celery salt
1 tsp. rosemary
1 tsp. thyme
2 tomatoes, cut into sections

Soak beans overnight. Drain beans. Sprinkle meat with tenderizer and brown meat thoroughly in oil. Put beans in large casserole dish. In fat remaining in pan where roast was browned, add chopped onion and cook until golden in color. Add 1 cup of tomato juice, stirring to remove all browned bits. Pour over the beans in casserole. Place meat on top of beans. Sprinkle meat with all seasonings and pour remaining 2 cups tomato juice over beans. At this point, also add some barbecue sauce over meat. Cover very tightly with foil and a lid. Bake at 350 degrees for 4 hours. Add tomatoes during the last 30 minutes.

This is a great one-dish meal. It tastes like meat that has been cooked in a pit, ala the Roseville Lion's Club pit barbecue.
