ORANGE CHICKEN 
4 to 6 chicken breasts
1/2 tsp. chopped ginger
1 tsp. salt
Dash of pepper
1 (8 oz.) can frozen orange juice concentrate
1 1/2 c. shredded coconut
2 c. canned mandarin oranges
2 green onions, chopped (with tops)

Place chicken, ginger, salt, pepper, and frozen orange juice in crock pot - low heat. Cook approximately 6 hours. Serve on hot rice. Top with coconut, orange segments, and green onions. Serve chicken liquid in gravy boat. Good sauce. Yummy!
