RICE & PEAS 
1 c. dry pigeon peas or red kidney beans
1 c. raw rice
1 tbsp. butter
1 tsp. rubbed thyme
1 sm. onion, chopped
Salt to taste

Soak the peas overnight in 3 cups of water. The next day add the remaining ingredients and bring to a boil. Cover and simmer gently until tender, adding more water if necessary.
