VEGGIE SALAD 
1 can mandarin oranges
1 jar marinated artichokes
Mushrooms
Asparagus, canned or fresh
Cherry tomatoes, if desired
Fresh spinach
Red leaf lettuce

DRESSING:

2 tbsp. Dijon mustard
2 tbsp. apple cider vinegar
2 tbsp. honey
2 tbsp. sesame seeds
1 clove garlic, minced
1/2 tsp. coarse ground pepper
Slivered almonds

I arrange lettuce on four salad plates and put vegetables on. Sometimes I use what vegetables are fresh and on hand; then I mix up the dressing and sprinkle it on top finishing with the almonds if I have them. I'm so crazy about this because it can be varied; the dressing oranges as artichokes are the main things I don't change.
