GREEK GREEN BEANS 
1 sm. onion, finely chopped
1/4 c. butter (olive or corn oil)
1 lb. fresh green beans
1 clove garlic, pressed
11 tsp. fresh mint leaves, minced
1 tsp. fennel seeds
1 tbsp. parsley, minced
1/2 c. tomato sauce
1/4 c. water
Salt & pepper to taste

Saute onion in butter until golden brown. Cut beans in 2 inch lengths. Add to onions and saute, stirring constantly, until bright green. Add remaining ingredients and simmer 30 minutes or until beans are tender.

Serves 4-6.
