EGG CUSTARD PIE 
3 eggs
3/4 c. sugar
1 1/2 c. milk
3 tbsp. butter
1 tsp. vanilla

Melt butter. Add milk and heat to scalding; beat eggs slightly. Add sugar and vanilla, stir into milk and pour into 9 inch pastry shell. Sprinkle with nutmeg. Bake at 475 degrees for 10 minutes, turn control to 375 degrees and bake for 10 minutes longer. Brush crust with unbeaten egg white before adding custard.
