ROAST CHICKEN
 
3 or 4 lb. fryer
butter
Pepper as desired
3 sprigs fresh rosemary, or 3 sprigs fresh tarragon

If you have to use dried herbs, about 1 teaspoon.

Rub the butter all over the chicken, and put a dollop inside the cavity. Place the chicken breast up on aluminum foil in a pan and grind pepper over it. Place the rosemary or the tarragon inside the cavity. Roast at 375 degrees for an hour, basting frequently.
