SOPA PARAGUAYA 
1 c. plain cornmeal
1 c. flour
1 tsp. salt
2 tsp. baking powder
1/2 c. shortening
1 c. mozzarella or soft cheese, cut in cubes
1 lg. onion, chopped
1 c. milk
1 ex. lg egg or 2 sm. ones

Sift dry ingredients together. Saute chopped onion in shortening until onion is soft. Set aside. Beat up egg with milk. Pour into dry ingredients and add onion and cubed cheese. Bake in greased pan in moderate 400 degree oven for 30 minutes or until done.

Sometimes a little more milk is needed. Mixture should not be dry. Can also be baked in greased muffin tins.
