RHUBARB CUSTARD PIE (Version #1) | |
1 recipe for double crust 3 eggs 2 2/3 tbsp. milk 4 tbsp. flour 1 c. sugar 1 c. brown sugar 1/4 tsp. salt 3/4 tsp. nutmeg 1 tbsp. lemon juice 1/2 tsp. grated lemon rind 4 c. chopped rhubarb 1 tbsp. butter Line pie pan with pastry. Beat eggs slightly; add milk. Mix in flour, sugars, salt and nutmeg. Add juice, rind and rhubarb. Pour into pie pan; dot with butter. Cover with lattice top. Bake at 400 degrees for 50-60 minutes or until brown. |
