PORK CHOP - RICE CASSEROLE 
6 pork chops
2 tbsp. lard
1 c. uncooked minute rice
1 env. onion soup mix
1 (4 oz.) can mushrooms
Hot water

Brown pork chops in lard. Spread rice in bottom of a 13 x 9 inch pan. Reserve 1 tablespoon onion soup mix and sprinkle rest over rice. Drain mushrooms, saving liquid and distribute over rice. Add hot water to mushrooms to rice. Arrange chops on top. Sprinkle with rest of soup mix. Cover with foil and bake at 350 degrees about 45 minutes to 1 hour. Remove foil and cook 10 minutes.
