POTATO CASSEROLE 
6 med. potatoes, cooked in jackets, peeled & cubed
1/3 c. chopped green onions
1 c. sour cream
1 1/2 c. grated Cheddar cheese
3/4 c. chicken stock
3/4 c. light cream
1/2 tsp. salt
1/4 tsp. ground pepper
1/4 c. butter
3/4 c. crushed cornflakes

Preheat oven to 350 degrees. In a 9 x 13 inch casserole, arrange potato cubes. Sprinkle green onions over top.

In mixing bowl combine sour cream, cheese, stock, cream, salt and pepper. Pour over potatoes. In saucepan, melt butter. Stir in cornflakes. Spread on potatoes. Bake for 30 minutes.
