POTATO PANCAKES 
4 lg. potatoes, grated
1/8 c. grated onion
2 tbsp. flour
1 egg, slightly beaten or 1 egg white plus 1 tsp. vegetable oil
Applesauce (optional)

(Keep grated potatoes covered with cold water until ready to mix other ingredients to prevent discoloration).

Mix all ingredients in large bowl. Spoon onto pre-heated non-stick or lightly oiled skillet and cook as you would regular pancakes. (Turn cakes when edges become lightly browned.) Serve warm with applesauce. Serves 6-8.
