BANANA BREAD 
1 c. sugar
1 egg
4 sm. or 2 lg. ripe bananas (1 cup mashed)
1 tsp. vanilla
2 c. flour
2 tsp. baking powder
1 c. nuts, chopped
1/2 c. shortening
1/2 c. milk
1/4 tsp. baking soda
Dash of salt

Mix together sugar, egg and shortening. Add bananas, milk and vanilla. Add flour, baking soda, salt and baking powder; mix until moist. Add nuts. Grease and flour loaf pan. Add batter. Bake in 350 degree oven for 1 hour and 15 minutes until toothpick comes out clean. Don't overbake. Cool for 20 minutes. Remove from pan. Finish cooling on rack. Wrap tightly with foil to keep moist.

Nice middle of the road, easy to make banana bread. Nice moist texture (not soggy). I used melted margarine for shortening. Baked perfectly in a large loaf pan in only an hour in a pre-heated oven. Tastes even better if you wait until the next day to eat it.
