LEMON SQUARES | |
1 c. flour 1/4 c. sifted powdered sugar 1/2 c. butter, melted 2 tbsp. flour 1/2 tsp. baking powder 2 eggs, beaten 1 c. sugar Grated rind of 1 lemon 3 tbsp. lemon juice Combine 1 cup flour and 1/4 cup powdered sugar; add butter, mixing well. Spoon into a 9 inch square baking pan; press into pan evenly. Bake at 350 degrees for 18 to 20 minutes. Combine 2 tablespoons flour and baking powder; set aside. Combine eggs, sugar, lemon rind, and lemon juice. Beat well. Stir dry ingredients into egg mixture and pour over baked crust. Bake at 350 degrees for 25 minutes or until set. Sprinkle lightly with powdered sugar. Let cook and cut into 1 1/2 inch squares. Yield: 3 dozen |
