EGGPLANT PARMESAN 
1 med. eggplant
1 egg, beaten
Flour
Spaghetti sauce
Mozzarella cheese
Salt & pepper

Peel and slice eggplant into medium slices. Place on paper towel and sprinkle salt and pepper. Dip slices in flour then egg and fry in hot oil until brown on both sides. Place slices in baking dish, making layers of eggplant, sauce and Mozzarella cheese. Bake at 350 degrees until cheese is melted.
