FROSTED LEMON BREAD WITH
CORIANDER
 
1/4 c. butter
2 eggs
1 1/3 c. sugar
1/2 c. milk
1 tsp. salt
1 tbsp. lemon rind
1/4 c. crushed coriander
2 tsp. baking powder
1 1/2 c. flour
2 tbsp. lemon juice
Confectioners sugar

Cream butter with eggs, sugar, milk and salt. Add lemon rind and coriander. Add baking powder sifted with flour. Whip together. Pour into a greased loaf pan. Bake 1 hour at 350 degrees. Cool and frost with icing made with confectioners sugar and lemon juice.
