SUGAR PLUM COOKIES 
2 c. finely grated almonds
3 c. flour
1/2 tsp. salt
2 tsp. baking powder
2/3 c. soft butter
1 1/2 c. sugar
2 eggs
1 tsp. rum extract
2 tsp. vanilla

Blend flour, salt, baking powder and grated almonds together. Set aside. Beat butter until fluffy in a large bowl. Gradually beat in sugar, eggs, rum extract and vanilla. Stir in flour mixture.

Roll on lightly floured surface until approximately 1/4 inch thick. Cut with cookie cutters. Place on greased cookie sheets. Bake at 350 degrees for 5-8 minutes. Cool. Paint on frosting and sprinkle with colored sugar crystals while frosting is wet.

FROSTING:

2 egg whites
2 c. confectioners' sugar

Beat egg whites until frothy. Beat in sugar. Divide into small dishes and add food coloring.
