ELEPHANT EARS 
2 eggs
2 1/2 tsp. salt
1 c. milk
3/4 c. sugar
1 c. boiling water
3/4 c. shortening
2 pkgs. yeast
1/2 c. warm water
6 1/2 - 7 c. flour

Beat eggs. Add salt, milk and sugar. In 2nd bowl, combine boiling water and shortening. In 3rd bowl dissolve yeast in warm water.

Mix bowls, 1 and 2 then add that to yeast mixture. Stir in flour. Knead 7-10 minutes. At this point you can roll dough into golf ball size pieces and freeze for use later.

When ready to use, thaw if necessary. Heat oil in electric fry pan or deep fryer to 375 degrees. Take dough balls and roll out on floured surface to 1/4 inch thick. Drop in hot oil and cook until brown on bottom, turn and brown other side. Drain on paper towel. Sprinkle with cinnamon and sugar, powdered sugar or top with fruit pie filling. Makes approximately 20 ears.
