THERESA'S TOSTADA PIZZA 
Enjoy my tasty no-yeast pizza!

CRUST:

3 tbsp. yellow corn meal, divided
1 3/4 cups all-purpose flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 cup milk
1/4 cup vegetable oil

Preheat oven to 400°F. Lightly grease a 12-inch pizza pan. Sprinkle 1 tablespoon corn meal over it.

Combine flour, 2 tablespoons corn meal, baking powder and salt in a bowl. Add milk and oil; stir until dough clings together to form a ball.

Turn onto lightly floured surface; knead 5 times. Roll dough into a 12-inch circle. Place dough into pan and bake at 400°F for 4 to 5 minutes.

Remove from oven and set aside.

TOPPING:

3/4 lb. ground beef
1 onion, chopped
1 (15 oz.) can refried beans
1 cup salsa (or picante sauce)
8 oz. shredded cheddar cheese (about 2 cups)
1 cup shredded lettuce
1 tomato, chopped
guacamole and/or dairy sour cream (optional)

Brown ground beef with chopped onion in skillet, drain well.

Spoon refried beans on crust, spoon ground beef and onion over beans, spoon salsa (or picante) over this mixture. Sprinkle shredded cheese over all and bake at 400°F for 8 minutes.

Top with lettuce and tomato before serving. Add guacamole and sour cream, if desired. Serve while warm.
