SKILLET EGGS AND POTATOES 
4 c. diced raw potatoes
2 c. boiling water
1 1/2 tsp. salt
1 1/2 tsp. white pepper
1 onion, minced
1/4 c. butter
6 hard cooked eggs into chunks
3/4 c. milk
Chopped parsley

Put first 3 ingredients in skillet, cover, and cook for 10 minutes. Uncover and cook until water is evaporated. Add next 3 ingredients and cook stirring occasionally until lightly browned. Add eggs and milk. Heat. Top with parsley. Makes 4 servings.
