SHRIMP DELIGHT 
1 to 1 1/2 lbs. shrimp, cleaned
2 c. washed raw rice
1 1/2 sticks butter
1 can Rotel tomatoes
1 can onion soup
1 can cream of mushroom soup
1 onion
2 stalks celery
1 bell pepper
3 tsp. salt
1/2 c. green onions
1/2 c. parsley

Saute onions, celery, bell pepper, green onions, and parsley in butter. Add soups and Rotel tomatoes. Stir in seasoned shrimp. Bring to a boil and add raw rice. Mix well. Bake at 350 degrees, covered, for 1 hour. Stir once after 30 minutes.
