UPSIDE-DOWN BRANBERRY MUFFINS 
1 beaten egg
1 1/2 c. milk
1/3 c. cooking oil
1 1/2 c. whole bran cereal
1/2 c. packed brown sugar
1/4 c. melted butter
1 1/4 c. all-purpose flour
1/3 c. granulated sugar
1 tbsp. baking powder
1 c. fresh or frozen cranberries

In large bowl, combine egg, milk and oil; stir in bran cereal. Let stand 5 minutes. Meanwhile, mix brown sugar and butter. Place 1 teaspoon brown sugar mixture into each of 18 greased 2 1/2 inch muffin pans. Sprinkle some cranberries into each.

Stir together flour, granulated sugar and baking powder; add to bran mixture, stirring until just moistened. Spoon atop cranberries. Bake in 400 degree oven 20 to 25 minutes. Cool 30 seconds; turn onto wire rack with cranberry side up. Makes 18.
