SURPRISE MUFFINS | |
1 egg 1/4 c. milk 2 tbsp. oil Pie filling or jam 3/4 c. flour 1/4 c. sugar 1 tsp. baking powder 1/4 tsp. salt Preheat oven to 400 degrees. Grease or line 6 muffin tins with "paper cups". Beat egg with fork; stir in milk and oil. Measure all dry ingredients onto a piece of waxed paper and blend thoroughly with spatula. Add dry ingredients to wet ingredients and mix until barely blended. (Batter will be lumpy). Fill muffin tins 1/3 full with batter. Add 1 teaspoon filling. Add more batter to make tins 2/3 full. Bake 20-25 minutes or until golden brown. Remove from pan. Makes 6. These are best eaten the same day. |
